Background
- New Zealand Qualifications Authority (NZQA) unit standards for reduced fat frying have been developed
- 21728 – Deep fry foods using low absorption techniques
- 21729 – Demonstrate knowledge of deep frying using low fat absorption techniques
- There are options for formal award via NZQA Qual Link (workbased training and assessment) and incorporation into tertiary programmes for caterers.
- The Chip Group has experience in training operators since 2002.
- Heart Foundation Tips on Chips on-site training has been evaluated and was effective for operators adopting recommended practices.
- Chip Group Online Training was launched in June 2008. The Chip Group issues a certificate on completion of each module. This training, which support the industry standards for independent fastfood outlets, was developed with input from Hospitality Standards Institute.
Stakeholder Feedback/Forum Discussion
It was suggested to get the Chip Group Online Training modules or NZQA unit standards on best practice frying techniques incorporated into the programmes offered by schools and polytechnics.
The modules developed for the Independent fastfood outlets would need minimal adaptation to make them applicable to the food service & hospitality sectors.
Many chefs receive on-the-job training which would make the Chip Group Online Training a very relevant back up.
